Every kitchen material has a temperature beyond which it degrades, and the numbers are not intuitive. Knowing roughly where each sits prevents most equipment damage.

  • Enamel: handles oven heat well but cracks with sudden temperature change
  • Stainless and cast iron: effectively unlimited for domestic cooking

What a Hot Pan Actually Reaches

A dry pan on a high burner passes 500°F within a couple of minutes, which is beyond every material except metal.

This is why utensils should not be left resting in a hot empty pan, and why the melted-spatula-tip is such a common domestic accident. The tool was fine at cooking temperature and the pan was not at cooking temperature.

Thermal Shock

Practical Habits

Do not leave utensils resting in pans. Do not preheat empty coated cookware. Let hot things cool before washing. And treat handles and lids on cast iron as hot throughout, because they are.
